KELCOGEL HM-PURE [E] is a high acyl gellan gum used in the food industry. It is a non-GMO identity preserved gellan gum manufactured using traceable non-GMO raw materials. KELCOGEL HM-PURE [E] provides benefits such as excellent suspension of insoluble ingredients, minimal contribution to viscosity and compatibility with a wide variety of neutral pH products. It results in products with excellent shelf life stability and can be used in combination with other hydrocolloids to tailor suspension performance and mouthfeel. KELCOGEL HM-PURE [E] is typically used at 0.025-0.035% and can be dispersed readily into systems using common mixing devices.
