Carrageenan
Carrageenan is a naturally occurring polysaccharide extracted from red seaweed.
Carrageenan has three types, Iota, Kappa, and Lambda. Iota Carrageenan forms flexible and elastic gel; Kappa Carrageenan forms strong and brittle gel; Lambda Carrageenan creates viscosity.
Carrageenan will stabilize emulsions. Its thickening and thixotropic properties give integrity to the system and inhibit the oil from coalescing and forming a separate phase.
