KELTROL BT is a clarified 80-mesh food-grade xanthan gum suitable for use in food preparations where complete hydration in high salt systems is required.







  • Imparts high solution viscosity at low gum concentrations

  • Has pseudoplastic rheology profile (e.g., is shear thinning)

  • Exhibits little solution viscosity change over a wide temperature range

  • Compatible with and stable in solutions containing high salt concentrations

  • Soluble and stable in both acid and alkaline conditions

  • Can fully hydrate in high salt systems (e.g., 2-20% NaCI) where performance of standard grades is unpredictable

  • Provides excellent suspension for insoluble solids and oil droplets

  • Provides freeze-thaw stability

  • Exhibits low viscosity while processing (e.g., pumping)

  • Fully recovers viscosity after shearing

  • Eliminates problems with incomplete gum hydration in high salt systems

  • Will hydrate faster than standard grades is low salt systems (e.g., 1 - 2% NaCI)

  • Acid/salt tolerance provides more flexibility with respect to order of addition

  • Can be blended with salt and added directly to the water phase without severely impacting the hydration of the gum

  • Kosher and Halal approved
