- Imparts high solution viscosity at low gum concentrations
- Has pseudoplastic rheology profile (e.g., is shear thinning)
- Exhibits little solution viscosity change over a wide temperature range
- Compatible with and stable in solutions containing high salt concentrations
- Soluble and stable in both acid and alkaline conditions
- Can fully hydrate in high salt systems (e.g., 2-20% NaCI) where performance of standard grades is unpredictable
- Provides excellent suspension for insoluble solids and oil droplets
- Provides freeze-thaw stability
- Exhibits low viscosity while processing (e.g., pumping)
- Fully recovers viscosity after shearing
- Eliminates problems with incomplete gum hydration in high salt systems
- Will hydrate faster than standard grades is low salt systems (e.g., 1 - 2% NaCI)
- Acid/salt tolerance provides more flexibility with respect to order of addition
- Can be blended with salt and added directly to the water phase without severely impacting the hydration of the gum
- Kosher and Halal approved
