KELTROL GM is a 40-mesh food-grade xanthan gum suitable for use in food preparations where delayed hydration is desirable. 



  • Imparts high solution viscosity at low gum concentrations

  • Has pseudoplastic rheology profile (e.g., is shear thinning)

  • Exhibits little solution viscosity change over a wide temperature range

  • Compatible with and stable in solutions containing high salt concentrations

  • Soluble and stable in both acid and alkaline conditions

  • Exhibits synergistic increase in viscosity when used with guar and locust bean gum

  • Free-flowing; low dusting; more dispersible than standard 80-mesh grades

  • Hydrates approximately 3-5 times slower than standard xanthan gum

  • Provides excellent suspension for insoluble solids and oil droplets

  • Provides freeze-thaw stability

  • Exhibits low viscosity while processing (e.g., pumping)

  • Fully recovers viscosity after shearing

  • Reduces dust exposure, which minimizes industrial hygiene issues, slipping hazards, and improves general housekeeping

  • Disperses well in low shear applications

  • Allows for delay in viscosity development of a solution

  • Kosher and Halal approved
