Description

Lipases are enzymes that catalyze the hydrolysis of fats into fatty acids and glycerol. Lipases have better emulsification and increased viscosity, and can be used in a variety of applications from efficiently enhancing sharp cheese flavors, to improving volume, color and crumb structure in bakery products. It also improves firmness and whiteness of noodles to decrease stickiness and oil take up when fried.
