Gum tragacanth
Polygum grades - Description
Tragacanth is the dried exudate from several species of Middle Eastern legumes. The root of the plants are drained and the sap dried to produce gum tragacanth, a viscous, odorless, tasteless, water-soluble mixture of polysaccharides. Gum tragacanth is used as an emulsifier, stabilizer and thickening agent in the food and beverage industry.
